Scones

For around 15 scones. 

500 grams of flour, plus extra for dusting
125 grams of butter
125 grams of sugar
1/2 tsp of salt
1/2 tsp of baking soda
250 ml (1 cup) of buttermilk, plus extra for brushing the tops

Preheat the oven at 200 degrees Celsius. 

Mix the dry ingredients and work in the butter. Add the buttermilk and mix until it just comes together - don't knead or press it down to much.

On a floured work surface, roll the dough into rolls of around 10 cm diameter. Using a sharp knife, cut the roll into 2-3 cm slices. Place the slices on a baking sheet, spaced of slightly since the scones will rise in the oven. Brush the tops with buttermilk, bake for 15 minutes.


These are very simple scones which can easily be scaled up. Use 1/4 of your weight of flour in sugar and butter, and 1 cup of buttermilk per 500 grams of flour. 

Lactose free buttermilk is perfectly fine to use, and for a vegan version you can use margarine, your favorite milk replacement and a squirt of lemon juice, since it needs an acid to activate the baking soda. Gluten free flour should work fine, but I haven't had a chance to try this yet.
