Slowcooker chili
This is a simple chili using mostly shelf-stable ingredients. Amounts are for a 5-6 liter slowcooker and will feed about 10 people.
- Cubed tomatoes, 3 cans of 400 grams
- Kidney beans, 3 cans of 400 grams, drained
- Corn kernels, 2 cans of 200 grams, drained
- Bell peppers, 8, chopped
- Chopped garlic, 50 grams (1/2 small jar)
- Ground cumin, 3 tbsp
- Smoked paprika powder (mild), 5 tbsp
Put everything into a slow cooker, stir, and cook on high for at least 3 hours. Optionally serve with wraps, grated cheese and sour cream (or vegan alternatives). Toasted cashews would also add a nice bite.
