Opinions and convictions

I have strong opinions about food. Other things as well, but this Blog is mostly about cooking, and I do get...intense about food. I'll list them here.

First and foremost:
Food allergies, dietary restrictions and personal preferences are all valid and must be taken into account when cooking for others. This does not mean everyone must be able to eat every dish you make, but everyone you've offered to cook for should at least have a complete meal they can safely and freely enjoy.

Yes, that includes people trying out a gluten free diet even if they're not diagnosed with Coeliac disease; people who don't like fish; anything.

It helps for me to know the severity, of course. Cooking for someone who is deathly allergic to any kind of nightshade takes different precautions from cooking for someone who just can't have more than a little bit of something. But it is entirely up to the guest if they feel like they need to elaborate.

Other opinions:

  • Food waste (should be avoided as much as possible)
  • Amounts of herbs and spices (yes, use plenty and a bit more)
  • Related: Spicy hot food is overrated. Who the fsck gatekeeps food?
  • Rice (should be cooked with measured water, never drained)
  • Bananas (best when yellow with some brown specks).
  • Names. Words mean things! Satay/sate is meat roasted on a skewer, not peanut sauce. Rendang is a stew which is slowly reduced until dark and nearly dry, not a quick soupy curry. Nasi means nothing more than 'cooked rice'.
  • Fusion food is amazing. Yes, please put pineapple on pizza and roast beef on sushi!
  • I'll eat any food that is served to me. I don't expect everyone to feel the same, and realize how lucky I am with my palate.
